Chili lime cashews and almonds
Yields 2 cups
Ingredients
1 tsp extra virgin olive oil
1 cup raw organic almonds
1 cup raw organic cashews
3/4 tsp fine sea salt
1/4 tsp chili powder, more to taste
juice of 2 small limes (or 1 1/2 large)
Directions
Heat the oil in a a cast iron skillet over medium-high heat for 1-2 minutes, then turn down the heat to medium low.
Add almonds and cashews to the skillet and sauté, stirring often, for 3-5 minutes until they begin to brown.
Squeeze the juice of the limes over the nuts, continuing to sauté frequently as you add the juice. Turn off the stove, season nuts with salt and chili powder, and stir once more. Taste, adding more chili powder or salt as desired.
Allow to cool completely (at least 1 hour) before storing in the refrigerator (will keep well for up to 1 month).
