roasted new potatoes

roasted new potatoes
serves 3-4

Ingredients
2 pounds small new potatoes, quartered
3 tablespoons extra-virgin olive oil
1 teaspoon paprika
3/4 teaspoon sea salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme

Directions

  1. Preheat oven to 425 F and line a sheet pan with parchment paper for easy clean up.

  2. Combine all ingredients on the pan and toss well to coat.

  3. Place baking sheet into oven and bake for 30-45 minutes, stirring halfway through.

  4. Remove from oven and enjoy!
