coffee buzz smoothie

 

This smoothie is pure gold, especially on days when you need a little extra energy boost to get your day going. Our go-to breakfast these days, this shake somehow manages to taste like Frappuccino but includes all of the components of a well-balanced, nutritious meal. It calls for 1/2 cup of brewed coffee, so it can replace your morning coffee for the caffeine sensitive. For our 2 cups/day friends who like to have their coffee first thing, it can also serve as a second wind!

serves 1

1/2 cup unsweetened vanilla or plain almond milk (we use Malk)
1/2 cup brewed coffee
1 pitted Medjool date (or substitute 1/2 frozen banana)
2 handfuls spinach or kale (fresh or frozen)
1 tablespoon unsweetened peanut butter
1 serving vanilla plant-based protein powder or collagen peptides (we use Livwell or Vital Proteins)
dash of cinnamon
1/2 cup frozen cauliflower rice (optional)
1 tablespoon cacao powder (optional)
coconut flakes, to serve (optional)

Directions

  1. Combine all ingredients in a high-speed blender. Top with a pinch of coconut flakes, if using. Enjoy!

  2. Note: if you prefer a thicker and icier constancy for your smoothie, add in 2-4 ice cubes or 1/2 cup frozen cauliflower rice. If you prefer a thinner smoothie, add more almond milk.
