maple chili delicata squash
serves 6-10
Ingredients
3 medium delicata squash, halved lengthwise, seeded and sliced into half-moons (~1/2-inch thick)
3 tablespoons extra-virgin olive oil
3 tablespoons pure maple syrup
1/2 teaspoon fine sea salt
1/4 - 1/2 teaspoon chipotle chili powder (or substitute plain chili powder or smoked paprika)
1/8 teaspoon ground cinnamon
1-2 tablespoons fresh or dried rosemary or thyme
garnish (optional):
toasted pumpkin seeds
herbs (such a chopped sage, fresh rosemary or thyme), or microgreens
Directions
Preheat the oven to 425 F and line two baking sheets with parchment paper for easier clean up.
In large bowl, whisk together the olive oil, maple syrup, salt, spices and herbs until emulsified. Add squash and toss to coat.
Arrange squash on baking sheets, pouring excess marinade on top. Roast for 25-30 minutes, until golden brown on all sides, flipping half way through.
Garnish with toasted pumpkin seeds, herbs and/or microgreens, if using.
