Lettuce-wrapped turkey burger sliders with sweet potato fries
serves 2-4
Ingredients
for the sweet potato fries:
2 large or 3 medium sweet potatoes (~2 lbs), cut into 1/4-1/2” sticks
2 tablespoons avocado oil or extra-virgin olive oil
1 teaspoon garlic powder
1 teaspoon paprika, preferably smoked (we love Burlap and Barrel)
sea salt and freshly ground pepper
for the turkey burgers:
1 pound organic ground turkey breast
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon sea salt
1/2 teaspoon freshly ground pepper
1/2 teaspoon coriander
pinch of cayenne (optional)
2 scallions, chopped
extra-virgin olive oil or avocado oil
to serve:
romaine, iceberg or butter lettuce leaves
any of the following fixins (optional): sliced tomatoes, ketchup and/or special sauce (we love Sir Kensington's), bread and butter pickles
we love to pair this meal with a big side salad or veggie of choice!
Directions
To make the fries: preheat oven to 400 degrees and line two baking sheets with parchment paper for easier clean up. Directly on one of the pans, toss the fries along with the oil and spices and season with salt and pepper. Divide fries evenly among the two sheet pans, spreading out and making sure not to overcrowd. Bake until browned and crisp on the bottom, ~20-25 minutes. Toss once and cook for 5 minutes longer.
While the fries cook, combine ground turkey, onion powder, paprika, salt, pepper, coriander, cayenne (if using) and green onions in a large bowl. With wet hands, form the mixture into 6-8 sliders.
Heat a grill pan or cast-iron skillet over medium-high heat, brushing it with a little oil (extra-virgin olive or avocado oil) to prevent sticking. Grill each slider for 4-5 minutes on each side, or until fully cooked (they should register 165 F degrees at the center of the burger with a meat thermometer).
Serve the sliders in lettuce cups topped with fixings of choice. Wrap and enjoy alongside the sweet potato fries and a side salad or veggie of choice!
