green goddess salad
serves 1

Ingredients
4-6 cups packed leafy greens of your choice (such as arugula, baby kale, romaine, spinach, little gems, or a combination of any of these)
2-3 radishes and/or small raw beets, thinly sliced
1/2 cup to 1 cup cooked chickpeas
1/4 avocado, sliced
1 Persian cucumber, thinly sliced
1 scallion, thinly sliced, white and light green parts only
green goddess tahini dressing, or your favorite dressing

optional (to serve)
1 serving seed crackers (such as Mary’s Gone Crackers or Simple Mills)

Directions

  1. Combine all ingredients in a large salad bowl and toss with salad dressing. Serve with crackers, if using, and enjoy immediately!
