salty sweet salad
serves 2

Ingredients
6-8 cups packed leafy greens of your choice (such as arugula, baby kale, romaine, spinach, little gems, or a combination of any of these)
1/2 cup to 1 cup cooked quinoa
1/2 avocado, diced
1/4 cup pomegranate seeds
3 tablespoons capers, drained
3 tablespoons toasted pumpkin seeds
apple cider vinaigrette, lemon-garlic tahini dressing or your favorite dressing

Directions

  1. Combine all ingredients in a large salad bowl and toss with dressing of choice. Enjoy immediately!
