Mixed berry crumble
yields 4-8 servings
Ingredients
for the berries:
18-30 ounces mixed fresh berries (we love a mix of blueberries, rasberries and blackberries)
3 tablespoons plain seltzer
1 teaspoon fresh lemon juice
for the crumble topping*:
1/3 cup rolled oats
1/3 cup almond flour
2 tablespoons maple syrup
to serve (optional):
Coconut whipped cream (we love this cocowhip from So Delicious), plain greek yogurt, or your favorite vanilla ice cream!
*note: depending on how many berries you end up using and the size of your baking dish, you may find that you want to make a second serving of the crumble to cover more surface area
Directions
Preheat the oven to 350 F degrees.
Add the berries, seltzer and lemon juice in a medium to large oven-proof enamel or glass baking dish and toss to combine. Cover tightly with foil and bake in the oven for 20 minutes.
Meanwhile, in a separate bowl, stir the oats, almond flour and maple syrup until well combined.
Remove the berry mixture from the oven and raise the oven temperature to 425 F degrees.
Toss the berry mixture, and then spoon dollops of the oat mixture all over (if you find you don’t have enough of the mixture, make a second serving to add more).
Place back in the oven, uncovered, for an additional 10-15 minutes (you can also broil for a few minutes at the end if you want you oats more browned).
Serve with a scoop of coconut whipped cream, greek yogurt or ice cream, if desired! Store leftovers (without whipped cream, ice cream or yogurt) in the fridge for up to 3 days.
