mela trail mix

A MELA standby, we love this trail mix for a well-balanced afternoon snack (especially when we’re on the go!). Make a big batch to keep on hand or a single serving for a quick snack (see note below).

MELA trail mix
6 servings

Ingredients
1/3 cup unsweetened coconut flakes
1/3 cup cashews (raw or toasted)
1/3 cup raw almonds (raw or toasted)
1/4 cup raw cacao nibs (or substitute vegan mini chocolate chips - we love Enjoy Life)
1/3 cup dried mulberries (or substitute goji berries, unsweetened dried raisins or cherries)

Directions

  1. Combine all ingredients in a glass jar with a tight fitting lid.

  2. Enjoy now or safe for later! Trail mix will keep well sealed in a cool, dark place for several weeks.

Note
For a single serving, combine: 7 cashews (or 10 almonds), 2 tablespoons coconut flakes, 1 tablespoon cacao nibs or chocolate chips, and 2 tablespoons dried mulberries or goji berries.
