energy bites 2 ways

We’re loving energy bites for an afternoon pick-me-up (recommend enjoying 2) or the perfect post dinner sweet treat (suggest 1).

We adapted Dr. Will Cole's cacao, coconut and hemp bites and Sakara Life's superfood cookie dough bites and they did not disappoint.

Beyond their delicious flavor, these little bites are great because you can store them in the freezer for up to a month. You can eat them straight from the freezer (they still melt in your mouth!) or take them out in the morning on your way to work and allow to thaw until ready to eat.

Energy balls 2 ways
Yields 15-20 balls

Cacao, coconut and hemp energy balls (adapted from Dr. Will Cole)
5 Medjool dates, pitted
1/4 cup hemp hearts
1/4 cup raw cacao powder
2 tablespoons unsweetened shredded coconut
1/4 teaspoon vanilla extract
1/4 teaspoon sea salt
2 tablespoons finely chopped unsweetened dark chocolate (we used Hu Kitchen)

In a food processor, pulse the dates until a ball forms. Add all remaining ingredients and process until well combined and almost smooth. If the dough isn’t moist enough to form a ball, add water 1 teaspoon at a time and pulse to combine. Using wet hands, shape the dough into 15-20 even-sized balls.

Store in the freezer in an airtight container for up to 1 month.

Superfood cookie dough bites (adapted from Sakara Life)
1/2 cup cashew butter (or substitute almond butter)
2 tablespoons pure maple syrup
1/2 teaspoon pure vanilla extract
1/4 cup coconut flour
3 tablespoons ground flaxseed
1/4 teaspoon sea salt
1/4 cup cacao nibs
2 tablespoons hemp hearts
2 tablespoons unsweetened shredded coconut

In a large bowl, stir together the almond butter, maple syrup and vanilla until creamy. In a medium bowl, combine the flour, flaxseed and salt. Add the dry ingredients to wet and mix well to combine, then use the a spoon to work in the cacao nibs until evenly distributed. Use wet hands to form the balls into 15-20 even sized balls. On a small bowl or plate, mix together the hemp seeds and shredded coconut and roll each ball in the mixture until fully coated.

Store in the freezer in an airtight container for up to 1 month.
