creamy maple dijon dressing (and dipping sauce)
This dressing, which gets its creaminess from tahini, has quickly become our new go-to. It’s especially delicious on our fall salad, but it really works with everything.
We also love using it as a dipping sauce for our toddlers - they go crazy for it on everything from pan-fried tofu to carrots, green beans and broccoli.
Creamy maple dijon dressing
yields ~1 cup
Ingredients
2 tablespoons tahini
2 tablespoons apple cider vinegar
2 tablespoons water, plus more to reach desired consistency
1 garlic clove, grated
1 tablespoon maple syrup
2 tablespoons grainy mustard
2 tablespoons extra virgin olive oil
sea salt and freshly ground pepper, to taste
Directions
Add all ingredients along with 1/4 teaspoon sea salt and a few grinds of fresh pepper to a jar with a tight-fitting lid. Whisk well to combine, adding additional water, 1 tablespoon at time, to reach desired consistency (note: sauce will thicken slightly in the refrigerator). Season with additional salt and pepper to taste, if desired.
Enjoy immediately, or store leftover dressing in the refrigerator for up to 5 days.
