MELA's classic chicken salad

MELA’s classic chicken salad
serves 2-3

2 cups shredded or diced cooked chicken (~2 large breasts)
1-3 tablespoons avocado oil mayonnaise (we love Primal Kitchen)
1 tablespoon Dijon mustard
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon kosher salt
Freshly ground pepper
1/3 cup minced red onion
1/2 cup diced apple
1/4 cup chopped parsley, tarragon and/or dill

Directions:

  1. Add all ingredients to a bowl and mix well to combine. Start with 1 tablespoon mayonnaise, adding 1-2 more if needed to reach desired consistency. Taste and add more salt, if desired. Enjoy!
