mela's breakfast tacos

MELA’s breakfast tacos
serves 1

2 pasture-raised eggs
1 teaspoon extra-virgin olive oil or avocado oil
1/4 avocado, sliced or mashed
1 Siete grain-free tortilla (almond, cassava, or coconut flour varieties)
handful of mixed greens or arugula

to serve (optional):
salsa
hot sauce
shaved radishes
pickled red onion
chopped cilantro

Directions:

  1. Gently heat the tortilla in a sauté pan over medium heat, flipping occasionally until warmed through, about 2-3 minutes. Remove and set aside on serving plate, then top with a small handful of mixed greens or arugula.

  2. Using the same sauté pan, heat 1 teaspoon of extra-virgin olive oil (or avocado oil) over medium-low heat and scramble the two eggs. Remove from heat and place the eggs on top of greens on the tortilla.

  3. Add sliced or mashed avocado along with any optional toppings. Wrap and enjoy immediately!
